This menu is great if the bride is a health nut and enjoys lighter meals in the evening. This is also a menu idea if there is a lot of activities with movement planned for the bridal shower. There won’t be any excuses for being TOO full to participate. <\/p>\n\n\n\n

These items are also easy to make. There will be less stress for the hostess because this is an easy meal to accomplish in a short period of time. Most of this food could be prepared a head of time so that it is out of the way.<\/p>\n\n\n\n

Savory Artichoke Dip (Serves 12)<\/h4>\n\n\n\n

2 6 ounce jars of artichoke hears<\/p>\n\n\n\n

1 cup of mayonnaise<\/p>\n\n\n\n

1 cup of parmesan cheese<\/p>\n\n\n\n

1 medium sized onion<\/p>\n\n\n\n

Pre-heat oven to 350 degrees. Place artichoke hears, mayonnaise, parmesan cheese and onion together in electric blender. Blend until smooth and creamy. Pour into a small baking dish. bake for approximately 30 minutes. serve warm with chips or crackers.<\/p>\n\n\n\n

Foil-Baked Fresh Whole Salmon<\/h4>\n\n\n\n

1 whole fresh salmon<\/p>\n\n\n\n

2 ounces of butter<\/p>\n\n\n\n

2 bay leaves<\/p>\n\n\n\n

Salt and pepper <\/p>\n\n\n\n

Directions<\/strong><\/p>\n\n\n\n

Preheat oven to 250 degrees. Clean fish, then put in the middle of a large piece of foil. Add a generous amount of butter to the foil and place bay leaves inside of the salmon. Put more butter on top of the salmon. Season to taste with salt and pepper. Wrap foil over the salmon and place on pan or heat proof plate. Bake in oven for approximately 1 hour.<\/p>\n\n\n\n

Spinach Salad<\/h4>\n\n\n\n

Crisp and refreshing! A salad is always a safe food option for guests. In this recipe, there is bacon. If you are sure your guests are vegetarian, it would be a good idea to exclude the bacon and keep everything else in this recipe.<\/p>\n\n\n\n

4 cups fresh baby spinach<\/p>\n\n\n\n

4 cups torn iceberg lettuce<\/p>\n\n\n\n

1\/2 pound bacon strips cooked and crumbled <\/p>\n\n\n\n

Dressing<\/em><\/strong><\/p>\n\n\n\n

1\/4 cup red wine vinegar<\/p>\n\n\n\n

4 cup chopped red onion<\/p>\n\n\n\n

3 tablespoons sugar<\/p>\n\n\n\n

3\/4 teaspoon salt<\/p>\n\n\n\n

1\/4 teaspoon ground mustard<\/p>\n\n\n\n

1\/2 cup canola oil<\/p>\n\n\n\n

1-1\/2 teaspoons poppy seeds <\/p>\n\n\n\n

Directions<\/strong><\/p>\n\n\n\n

In a large bowl, mix spinach, lettuce, mushrooms and bacon. <\/p>\n\n\n\n

For dressing, place vinegar, onion, sugar, salt and mustard in blender. While processing, gradually add oil in a steady stream. Place into to a bowl; stir in poppy seeds.<\/p>\n\n\n\n

Divide salad among six plates; drizzle with dressing.<\/p>\n\n\n\n
